The Magaña family's anaerobic Pacamara is a coffee that tastes unlike any other coffee that we roast. By picking the cherries when they are on the verge of overripe and then fermenting them anaerobically, under pressure and without oxygen in closed fermentation vessels, the family creates a full-bodied coffee that has lots of fruit, raisins and dark berries in the character. The Magaña family have their farms in the Apaneca region and take of them with great care and sensitivity. We have known Angel and his family for more than 15 years and buy their entire harvest. The family has a great commitment to both the environment and quality, always striving to be a little better every year. The philosophy is about growing and producing coffee in harmony with nature, a deep care for the balance of the soil and the ecosystem. Their farm is home to a variety of birds and other animals.
