Fermenting coffee in a closed environment, known as anaerobic fermentation, is the major trend in coffee production right now. The ambition is to bring out the fruitiness of the coffee and create flavorful and aromatic coffees with a great body. This is exactly what Jhonny Alvarado has done in this micro-lot on his farm Los Toños.
The coffee is first dried openly for 24 hours before Jhonny places the coffee cherries in closed barrels for 3-4 days. The cherries are then washed and dried on raised beds for 20 days. The result is a delicate coffee with a character of caramel, fruit punch, peach and yellow berries. mjölkchoklad och apelsinblomma.
