Coffee producer Luis Eduardo Campos runs the farm & washing station  Cordillera de Fuego in San Marcos - West Valley region - in Costa Rica. This lot comes from the Catuai & Caturra varieties.

The process starts with coffee cherries that are picked when fully ripe, dark red (26 brix); which means they have a high sugar content and thus feeds the thermal process. The cherries are then heated when the pulp is still on the beans. The exposure to the heat breaks down the natural sugars in the coffee cherries and partially caramelizes them. The coffee is then peeled and fermented under pressure in steel tanks. This inventive process gives the coffee a complex fruit-driven character with a smooth and sweet aftertaste.
