Nicolas and Patricia Ome owns and runs the farm Finca El Triunfo since 2005 - which aptly means Triumph - where the family grows the variety Pink Bourbon. Previously considered a hybrid of the Yellow and Red Bourbon varieties, recent research has shown that Pink Bourbon is in fact not Bourbon at all, but an heirloom variety, originating from Ethiopia (among its siblings is the highly prized Geisha variety). And nowhere else does the Pink Bourbon tree thrive as good and tastes as amazing as in the Huila region of Colombia.
In this cherry-dried lot we find sweet notes of tropical fruit, apple, milk chocolate, peach; a smooth juicy coffee with a lovely sweetness.
In addition to Pink Bourbon, the couple also grow Red Bourbon, Caturra, Colombia and Castillo varieties. The soil is volcanic clay, a nutrient-rich soil that provides the nourishment the coffee needs to flourish.
Patricia and Nicolas selectively handpick ripe, red cherry and process it on their farm. After picking, they hand sort cherry to ensure only the best quality cherry is processed. Cherry is laid on marquesinas to dry. Patricia and Nicolas rake parchment cherry to ensure even drying. The family is very detailed and has been closely following all these changes. Happy with the result so far, they believes that the farm will take another leap in quality in the coming years.
MORE ABOUT THE VARIETY PINK BOURBON
Pink Bourbon was previously thought to be a hybrid of Yellow and Red Bourbon varieties. The variety was first identified growing in and around Huila, Colombia. Recent research has found that Pink Bourbon is in fact not Bourbon at all. Pink Bourbon mostly likely comes from an Ethiopian landrace variety. Pink Bourbon has a stunningly high cup potential and it wows coffee professionals and consumers alike; there is just so much to love about this variety. Its impressively high cup quality makes even more sense now that we understand Pink Bourbon is not simply a hybrid of two Bourbon varieties but traces to Ethiopian landraces. Its siblings include the highly-prized Geisha, which has consistently produced incredibly high cup scores. Pink Bourbon will continue to be a highly distinguished and valued variety.
Some farmers also report that Pink Bourbon has more disease resistance than the Bourbons it grows alongside. Based on these new discoveries, this may be due to the genetic variety it has coming from Ethiopian landraces.
