Here is a very special coffee produced by Sebastian Gomez at Finca Divisa in Colombia. Sebastian is a progressive producer, known for producing rare coffee varieties with exceptional flavors.
This particular coffee is from the original Ethiopian variety Gesha. First discovered in Ethiopia in 1931, Gesha was first planted in Panama in 1963 and in Colombia in 2005.
To bring out the complex flavor, Sebastian uses a natural carbonation process to process the coffee cherries. The method - taken from winemaking and adapted to coffee making - involves fermenting in a carbon dioxide-rich and completely closed environment. The pressure created transforms the coffee into a fruit bomb of great complexity and sweetness.
