This is the fifth year in a row that we roast the naturally dried coffee from the Pacamara variety from the Magaña family in the Apaneca region; it is an amazingly balanced, smooth coffee with a round sweetness.

Each coffee cherry is hand-picked when purple, just on the verge of being over-ripe, and then slowly dried in its own pulp for over a month. The result is a rich coffee, with notes of plum, milk chocolate, nectarine and orange peel.

We have known Angel and his family for more than 15 years, we buy their entire harvest. It's a partnership we value highly. The family has a strong commitment to both the environment and quality, always striving to be a little better every year. Their philosophy is about growing and producing coffee in harmony with nature, a deep care for the balance of the soil and the ecosystem. Their farm is home to a variety of birds and other animals. The coffee is delicious in every conceivable brewing method.
